I have been looking for short culinary lessons about Mediterranean cooking and I found this 1 day lesson in CCA (Center for Culinary Arts). Actually its included in their 13 days Course which has the title of 13-DAY FUNDAMENTALS IN CULINARY ARTS COURSE (FCAC).  I was lucky when I called on that day because they will have the Meditteranean Cooking Lesson in two days time in Cubao branch.  So I asked for a reservation and I will just pay on the day of the lessons. When I arrived on the scheduled date, I met the regular students who really enrolled for the complete 13 days session. They were so warm and friendly and they look so cute in their Chef’s uniforms. They had already groupings for their actual cooking but I was lucky to be included in the boys group. The first part of the lesson was a discussion by Chef Carla about Meditteranean cooking history and the featured recipes that we are going to cook on that day. We had Seafood Paella, Meatball Kebabs with Paprika Cream Sauce, Blue Fin Tuna Skewers with Chermoula, Couscous with Peas, Moussaka with Spinach, and Cream Catalana.

The whole day activity was different from the other cooking demo that I have attended. There was an actual hands on in preparation, cooking, plating, tasting and dishwashing. But there is an advantage and disadvantage because some students are preparing one recipe and some students are already cooking another recipe, so I cannot observe and see everything whats going on because everything has to be done quickly and accurate. But anyway, I just have to practice the recipes at home where my family is waiting for my menu of the day.
