It has been a hectic semester with lots of headaches as class president in my nursing class. But summer came and I have no more minor subjects to enroll so this was perfect timing for my asian cruise.
Completing my documents and visa requirements was easy because of the great help of Ms. Marjorie from RCCL travel agency in Makati. RCCL is the cruise lines where I am sailing. it means Royal Carribean Cruise Lines. I just gave Marjorie all the documents needed for the visa application for the 3 countries China, Japan and Korea and after a month of waiting and take note without personal appearance, finally i got all my tourist visas. Yehey! Thanks to Ms. Marjorie (sorry i forgot her last name) and to her team who were all very accomodating.

The Ascension of Our Lord Parish Church, Lagro, Quezon City is now offering Basic Sign Language summer class for year 2010.

The Basic Sign Language Course is a three-month course which has 12 sessions. Each session, held every Sunday, runs from 1:00-5:00 p.m. (4 hours) with a total of 48 class hours. Part of the course is another 24 hours of exposure that will be required from each of the students which they will earn during church visits.

For year 2010, classes will start on March 7, 2010. Visit Ascencion of Our Lord Parish Church every Sunday mass for the deaf in Lagro, Quezon City at 10am so you can see the actual signing of our graduate students and teachers.

Classes will be held in the 4th floor of the Parish Bldg. every Sunday from 1pm to 5pm starting on March 7, 2010.

OBJECTIVEs of the BASIC SIGN LANGUAGE COURSE:

At the end of the course, the trainees are expected to:

1. Master the alphabet (A-Z) and be able to fingerspell words associating them with numbers and sentences

2. Sign vocabularies and sentences using the proper principles and guidelines in signing effectively

3. Sign songs and prayers expressively

EVALUATION

1. Signing vocabulary words and sentences learned

2. Song interpretation

3. Comprehensive Written and Oral / Practical Evaluation (Finals)

COURSE REQUIREMENTS

1. Attendance: at least 40 hours, 10 sessions (absences of not more than 2 sessions)

2. Pass the Comprehensive Written and Oral / Practical examinations.

3. At least 24 hours of interaction/exposure with the deaf individuals during signed mass and meetings and other activities that may be suggested.

I’m so happy to graduate from Basic Sign Language Class this summer 2009. I have an additional achievement this year. It started only when we heard from the church mass in Lagro, Quezon City that a Sign Language Class was being offered. So me and my mom went ahead and never missed a lesson.

The Hands For Praise Community of the Ascension of Our Lord Parish in Lagro Quezon City is accredited by PRID (Phil. Registry of Interpreters for the Deaf, Inc.)  At the end of 13 weeks I know now to how to spell, construct simple sentences, interpret songs and communicate with the Hearing Impaired, and even sign during Masses!

 

The classes were held in the 4th Flr. Seminar Hall of the Parish in Lagro, Quezon City. The class was from 1:00 PM - 5:00 PM, for 12 Sundays. And there’s no age limit, I have classmates from 8 years old to 58 years old. Some were SPED teachers, waiters, accountants, nurses, college and elementary students. They accept everybody who likes to learn the language of signs. And the fee is only cheap, its worth it.

In Deaf culture and sign language, a sign name is a special sign that is used to uniquely identify a person, just like a name. There are some special rules around sign names; for example, they must be given to you by a Deaf or Hard-of-Hearing person. This ensures that no one else in the community already has the same sign name, or that the same sign does not have a different meaning.

Like other classes, we also had our written exams. The questions were about the goals of PRID, the causes of deafness, diseases, and medicines that affects the hearing of a person, guidelines of finger spelling and the code of ethics.

This summer 2009, my niece joined a talent workshop to enhance her singing and acting talent.

We were happy to attend her recital in Metro Bar in Quezon City. She sang the new song of Miley Cyrus which is “The Climb”. It was a night of fun for the kids from ages 5- 16 years old. I enjoyed watching the kids do their modeling show, acting, singing and dancing numbers.

Day One – Eat fruits and lots of Fat Burning Soup (recipe below). Eat all fruits you want. Any kind except bananas. Canned fruit juice or fresh is OK.
(Note: Watermelon and Cantaloupe are lower in calories than most other fruits.) Drink unsweetened tea, unsweetened fruit juices and plenty of water.

Day Two – Eat Vegetables and lots of Fat Burning Soup. At dinner time help yourself to a huge baked potato with butter along with your soup. Eat any and all the vegetables you want. Canned, fresh, or frozen (without added sauces). Green, leafy veggies are especially good. Stay away from corn, dry beans, nuts and peas.

Day Three – Eat all the veggies and fruits you want and lots of Fat Burning Soup. Do not have a baked potato today.
Note: If you have eaten as directed above and have not cheated you will have lost 5- 7 pounds already!

Day Four – Eat lots of Fat Burning Soup along with three bananas for potassium and 5 -6 glasses of skin milk for calcium. Drink plenty of water.
(Add miller’s Bran to your diet if necessary to keep bowel movements regular.)

Day Five – Eat lots of Fat Burning Soup along with beef (Broiled fish or Skinless Chicken) and tomatoes. You can have 10-12 oz. of beef and a large can of tomatoes or as many as six fresh tomatoes. Be sure to drink 6-8 glasses of water today to wash away the uric acid in your body.


Day Six – Eat lots of Fat Burning Soup and beef and vegetables today (no potatoes). You can have two to three steaks today if you like and all the veggies you want. Go for the green, leafy veggies if possible. Remember, the Fat Burning Soup is the bases of your diet, so eat lots!

Day Seven – Eat lots of Fat Burning Soup along with unlimited brown rice, fruit and vegetables (except potatoes). Stuff yourself!

Note: At the end of Day seven. If you have not cheated, you will have lost 10 to 17 pounds. If you have lost more 15 pounds, go off the diet for two days before starting again at Day One.

Since everyone’s system is different, this diet will affect everyone differently. However, it is guaranteed that after just three days you will have more energy than when you begin.
(If you don’t cheat) Bowel movements will change after a few days on the diet. Add one half to one full cup of bran to your diet, if you like.

This Seven-Day diet eating plan can be used as often as you like. It actually cleans your system of impurities and gives you a feeling of well being and energy.

Absolutely no bread, alcohol, or carbonated drinks, include diet drinks.



FAT BURNING SOUP

6 large onions – yellow or green
2 green peppers
1 or 2 cans of tomatoes (stewed, crushed, paste or combinations)
1 large head cabbage
I bunch celery

In a large covered pot, place soup mix and medium cut vegetables. If you desire, add additional seasoning suck salt, pepper, curry, parsley, bouillon or hot sauce. Cover with water and simmer for approximately 45 minutes or until vegetables are tender.
Note: Should be used in conjunction with the Seven Day diet and not alone for indefinite periods.


Tuna Carbonara in Penne

Ingredients:

1 tbsp butter
2 tbsp olive oil
1 tbsp garlic, chopped
onions, chopped
red bell peppers, sliced
2 cans of tuna flakes
1/2 c parmesan cheese
1 c beaten eggs (4 eggs)
1/2 c cream (optional)
pinch of sugar (optional)
pinch of MSG (optional)
pre-cooked penne noodles

Procedure:

Mix the butter and olive oil over low heat.

Sauté the garlic, onions, and bell peppers.

Add the tuna flakes, cheese, and eggs, then mix well.

Add sugar and/or MSG, both of which are optional.

Add the penne noodles then mix thoroughly.

Lower heat then transfer the mixture on a plate.

Ingredients

Servings: 6-8 persons

* 1 kilo pork liempo (pork belly), sliced into strips about 1 inch thick
* 6 cloves garlic, chopped
* 2 pcs onions, chopped
* 1/4 cup minced ginger
* 6 cups coconut cream
* 1 cup green finger chilis (seeds removed), cut horizontally into strips
* 1/3 cup red chilis
* 2 Tbsps. turmeric
* 1/2 cup bagoong alamang (shrimp paste)
* Cooking oil


How to prepare Bicol Express

1. In a pan, heat a small amount of cooking oil. Saute garlic until fragrant and add onions. Cook until onions are tender.
2. Add shrimp paste and continue cooking for about 5 minutes.
3. Turning the stove to high heat, add meat and cook for another 10 minutes or until the meat releases its natural oil.
4. Put in the ginger and cook for few seconds.
5. Add in the coconut cream and chilis.
6. Cook for another 15-20 minutes or until the sauce has been reduced and thickened.

Serve with steamed rice.

* Amount of chilis may be adjusted depending on your tolerance for spicy dishes. However, chilis are said to help in clearing the nasal passages.

* Shrimp paste may be omitted since it can cause allergic reactions in some people. For saltiness, you may add fish sauce while cooking the meat (before adding coconut cream) or you may use salt as an alternative.



Finally after 3 months of waiting, the result of the Filipino Nursing Board Exams 2008 is released.

I’m a dolphin lover and fanatic. I have learn to love dolphins since I have worked in cruise ships. And I’m so happy this semester break, I got my chance to visit the dolphins in Ocean Adventure Subic Bay. Me and my partner took turns in driving in NLEX AND SCTEx going to Subic. I was reading news about products recalled for melamine, when I saw the name of the chocolate that I have in my fridge, the Dove Hazelnut, Almond and Raisin. Sad to say, I have to throw these chocolates now because it has been tested positive for melamine.

What is Melamine?

Melamine, the chemical that has tainted milk formula in China and made thousands of children ill, may have been part of the food chain in China for a long time, say food experts. But the health effects of long-term exposure in adults are unclear.

So far, 53,000 infants have fallen ill after drinking formula milk with melamine. Four babies have died, 13,000 have been hospitalised and 104 are in a critical condition with kidney stones caused by the adulterant. A girl in Hong Kong has become the first case of poisoning outside China. The makers of baby formula require their milk to have a high protein content, which they determine by measuring its nitrogen content. But farmers who produce milk that doesn’t meet this standard can beat the test by mixing it with melamine powder.

The chemical (C3H6N6), a white, crystalline powder used to make plastics, fertilisers and cleaning products, has a high nitrogen content and so makes the milk appear high in protein. Health experts say ingesting a small amount of melamine poses no danger, but larger amounts of the chemical can cause kidney stones and lead to kidney failure. Infants are particularly vulnerable.

Chinese suppliers trying to boost output are believed to have diluted their milk, adding melamine because its nitrogen content can fool tests aimed at verifying protein content.

Duque said a total of 49 other milk brands and milk products, mostly manufactured in China, were cleared of melamine contamination. Melamine is used as a binding agent and coating for particle, fibre and laminated board. It is also used to make fertilizer. The Philippines has banned the sale and importation of Chinese milk and milk products after the scandal broke out over fears these were contaminated with melamine.

Malaysian Health Minister Datuk Liow Tiong Lai said laboratory tests showed that Ego White Rabbit Creamy Candy samples showed that the content of melamine was 135 parts per million (ppm) compared with 2.5ppm, the level permitted by the Health Ministry.

Samples of White Rabbit Creamy Candy have been found to contain more than 50 times the permitted level of melamine.

I have been looking for short culinary lessons about Mediterranean cooking and I found this 1 day lesson in CCA (Center for Culinary Arts). Actually its included in their 13 days Course which has the title of 13-DAY FUNDAMENTALS IN CULINARY ARTS COURSE (FCAC).  I was lucky when I called on that day because they will have the Meditteranean Cooking Lesson in two days time in Cubao branch.  So I asked for a reservation and I will just pay on the day of the lessons. When I arrived on the scheduled date, I met the regular students who really enrolled for the complete 13 days session. They were so warm and friendly and they look so cute in their Chef’s uniforms. They had already groupings for their actual cooking but I was lucky to be included in the boys group. The first part of the lesson was a discussion by Chef Carla about Meditteranean cooking history and the featured recipes that we are going to cook on that day. We had Seafood Paella, Meatball Kebabs with Paprika Cream Sauce, Blue Fin Tuna Skewers with Chermoula, Couscous with Peas, Moussaka with Spinach, and Cream Catalana.

The whole day activity was different from the other cooking demo that I have attended. There was an actual hands on in preparation, cooking, plating, tasting and dishwashing. But there is an advantage and disadvantage because some students are preparing one recipe and some students are already cooking another recipe, so I cannot observe and see everything whats going on because everything has to be done quickly and accurate. But anyway, I just have to practice the recipes at home where my family is waiting for my menu of the day.
